Braise and Jaccard…………..really? google it for christsakes
DU, i cut the breast (across the grain) into 3oz medallions, jaccard them, rube em with a little olive oil, garlic, kosher salt and black pepper. Char-grill to Medium Well, serve with a sauce/salsa of your choice.
The legs and thighs are braised for upwards of 6 hours til the meat is falling off the bone, make a great sauce from the braising liquid by adding a little dark roux. pull the meat off bones, makes a great stew with the sauce and some root veges, peas and sweet corn
great story man, looks like your startin to hate as much as me! i’ve killed my 4 TX birds, 2 in OK(so i’m one short) and 1 here in NM.
